Last night’s table was laid with various different - homemade - dips.
Clockwise from top left : hummus, Chive Spread, Wasabi Pearl, Truffle Pearl, Baba Ghanoush, Körözött..
The last one ‘Körözött’ is a Hungarian Cheese Spread .
‘The main ingredient of Körözött was originally Liptauer or liptói túró, a sheep-milk based cheese. Liptó was a county of Hungary until the end of WWI. Liptó got disannexed from Hungary in 1919, and now it’s part of Slovakia. Though we lost Liptó, we never stopped eating Körözött’ .
I made this with Jersey Curd & Natural Live Yoghurt . You can find various recipes online or the way we like it:
250 g (~1 cup) Jersey Curd
1 middle red onion, finely chopped
1 tsp. ground Hungarian paprika
1/2 tsp. ground caraway seeds
1/2 tsp. salt
a pinch of freshly ground black pepper
80 g (~1/3 cup) butter
1 heaping tbsp Natural Live Yoghurt
In a small bowl blend Jersey Curd with the butter and Natural Live Yoghurt . Add the chopped onion, Hungarian paprika, salt, pepper and the caraway seeds. Mix to combine them. Chill for 3 to 4 hours so flavours can merge. Spread the Körözött on a slice of crusty bread or pitta bread, or it can be even filled in tomato peppers.
